Romania Truffles
         What are truffles?
     Truffles are fungi that have an outer rind called peridiod and a core called gleba. Like many mushrooms, truffles are living in symbiosis with trees, feeding it with the remove them by the roots, giving them in exchange for water and mineral salts of which they need, at the root of the trees: beech, lime, maple, Hazel, etc.

Truffles are considered delicacies in the great kitchens of Europe (France, Italy,SUA ,Germany,etc.), in Italy there and a Fellowship of the truffles.
        Where truffles grow in Romania
In the counties of Brasov, Harghita, Covasna, and Mureş, Cluj, Bistriţa, ...
Truffles are edible mushrooms that grow in the mountain areas and Hill on the root of the trees, nests, such as potatoes.

  Tuber Magnatum Pico


Intense and has a cream color-Brown at

exterior and Brown interior.

Location: the land of motherland is Italy and Croatia but we managed to identify and in Romania in the Woods

Summer truffle

Has irregular shape on the outside of the color

Brown to black, and the interior is studded

ribbed, white-grey or yellowish-white

Place: Almost throughout Europe make micoriză root, carpănului, oak and lime alunului River.

Period: from May to September

Winter truffle

Size is smaller than the other truffles with the scent of musk, outside the shiny dark brown or black-blue. Inside the fleshy-looking marble, albiciosă Windows or dull-gray

Place: Romania, Hungary, Yugoslavia, France, Italy

Period: from December to March

Oservaţie: Prefer the same places as tuber aestivum

                                    

      Tuber Macrosporum


The big nose

Place: Romania, Hungary, Spain, France, Italy, Yugoslavia

Period: from October to December

Note: is a more rare because it is a nose more demanding.

                                    

        Tuber Mesentericum


The layout is very similar to aestivum, but is more smooth.

Has the mărmuros layout, first white then yellowish-brownish. It has a pungent smell of tar.

Place: Romania, Hungary, Spain, France, Italy, Yugoslavia, Croatia

Period: from September to December

Note: a specific smell emanates from tar and for this reason is not a variety so sought.                            

      Choiromyces Meandriformis Michael


      Truffle porcească

Having a strong consistency keeps flavor and after drying. Can reach the weight of 20-250 g. It is easier to find because very often comes out of the ground and it is not necessary to search with dogs.

Place: Romania, Hungary, Slovakia, The Czech Republic, Germany, Austria

Period: from June to November

Note: is a specific variety of Carpathian Basin nose. At the beginning of the century there were families who were harvesting and selling of truffles.

                                        
                       CULINARY AND THERAPEUTIC QUALITIES

       Truffles reach maturity at different times of the year, some in the summer and winter ones. The citoplasmei mycelium is acumlează different organic substances which give the taste and smell peculiar to each species of truffles.
